Hyderabadi Chicken Dum Biryani

Hyderabadi Biryani, also known as Hyderabadi Dum Biryani, is a style of biryani made with basmati rice and meatmostly chicken ) from Hyderabad, India. Originating in the kitchens of the Nizam of Hyderabad, it combines ingredients of Hyderabadi and Mughlai cuisine.

There are so many types of biryanis around the world and each one is unique. And they vary in taste and appearance depending on the region where they are made.

But then there may be innumerable Biryanis, but “Hyderabadi Dum Biryani” has its own place. Sourness, spice and taste in it are all unique. In fact, Hyderabadi Dum Biryani or Mutton Dum Biryani first and only then Chicken Biryani and Veg Biryanis have found their name.

Though Hyderabadi Biryani has been introduced by the Nizams, Andhra people have added their own spices and masalas and made it even tastier. Biryani should be cooked on the wood fire, and only then it is authentic say Biryani Masters. But now we don't use much wood fire so we can cook on gas stove with the same taste.



How to prepare Hyderabadi Chicken Dum Biryani?

When I learned how to prepare biryani, it was a big challenge for me to make it in small quantities for just 4 -5 people. I have tried many times and reduced the spices and made it. But still, there's a problem with the dum, and it's too hard, and there's a burnt crust at the bottom. But every time there was the satisfaction of learning something new. So this recipe depends a lot of experience. And I have a detailed explanation of what could go wrong and what to do.


Ingredients for Hyderabadi Chicken Biryani :

( *Tsp-Teaspoon, *Tbsp-Tablespoon)

  • Chicken - 1 kg ( large pieces with bones )


For marinating the Chicken :

  • Red chilli powder - 5 tsp
  • Coriander powder - 4 tsp
  • Salt - 2 tsp
  • Ginger garlic paste - 4 tbsp
  • Green cardamom powder ( only seeds and strained ) - 3/4 tsp
  • Shah jeera whole - 1 tsp
  • Cloves - 10 pcs
  • Cinnamon - 8 no's
  • Onions, fried crisp & crushed - 4 medium onions (or 7-8 tbsp)
  • Coriander leaves, fine chopped - 1 cup
  • Mint leaves (Pudina) , rough chopped - 1/2 cup
  • Lemon juice - 1 lemon (3 tsp
  • Green chillies, crushed - 5 no's (2 tbsp)
  • Beaten / whisked curd - 300 ml
  • Oil ( in which onion was fried ), cooled - 1 cup


For cooking rice & Dum cooking :

  • Basmati rice - 750g
  • Shah jeera - 3/4 tsp
  • Green cardamom (Elachi) - 4
  • Cloves - 4
  • Cinnamon- 2 pcs
  • Salt - 2 1/2 tbsp
  • Saffron strands soaked in warm milk
  • Water to boil the rice - around 2.5 litres 
  • Onions, sliced fine & fried crisp (birista) - 2 medium (4 tbsp)
  • Mint leaves - around 10 - 15 leaves
  • Water to be taken out after boiling rice - 1/2 cup
  • Ghee - 1 tbsp 
  • Foil to use for DUM cooking

Preparation :

  • Clean and wash the chicken. Drain the water completely.
  • Slice 4 medium onions and fry in oil until golden colour. Remove and after cooling, crush with your hands.
  • Reserve 1 cup of this oil that was used for frying the onions.
  • Take out seeds from around 15 green cardamoms. Make a powder of it and filter it to give 3/4 tsp powder.
  • Fine chop 1 cup of coriander leaves, rough chop 1/2 cup of mint leaves and roughly crush the 5 green chillies.

 

To marinate:

Take a heavy bottom pan that will be used for cooking biryani in DUM and add the chicken pieces. Now add all the ingredients for the marinade. Mix it well, cover and keep aside for 2 hours.


One hour after marinating the chicken ( or one hour before cooking the rice ):-

Take 1/2 cup of warm milk and soak some strands of saffron. Mix it with a spoon.


30 minutes before cooking the rice:-

  • Wash and soak the bsmati rice for 30 minutes.
  • Slice 2 medium onions and fried in oil unill golden colour.
  • Take out around 10-15 mint leaves.


Process:

  • Take a heavy bottomed pan or hot pot and add around 2.5 liters of water to cook the rice. Put the water on high flame to boil.
  • You can add the water in which rice was soaked in this 2.5 liters for better taste and flavour.
  • While the water is coming to boil, add 3/4 tsp shah jeera, 4 green cardamom, 4 cloves, 2 cinnamon pieces.
  • Add 2 1/2 tbsp salt. Mix it well so that the salt dissolves completely. The water should be very salty. 
  • Once the water is boiled, add the strained basmati rice & mix it well. 
  • Continue to boil over high flame, stirring a few times very gently to prevent the rice from breaking.
  • After exactly 5 minutes on high flame, start scooping out the half cooked rice with a slotted ladle and pour over the chicken arranged in a heavy bottomed pan / lagan. Continue like this until half of the rice is comes out.
  • Now spread half of the birista ( fried golden colour onions ) and all the mint leaves. 
  • Spread out the balance rice on top of the 1st layer of rice. 
  • Finally take out 1/2 cup of hot rice water and add 1 tbsp of ghee in it. Mix it well and pour it evenly over the rice.
  • Now, seal the pan with foil to cover it completely. Fold it in and place the lid on top.
  • Keep this pan on high flame for 10 minutes on direct heat. Place a bowl filled with water on top of this for weight.
  • After 10 minutes, take a heavy tawa and shift the pan to the tawa to cook the DUM.
  • Keep it on high flame for 2 minutes and reduce flame to low and cook in DUM for 30 minutes.
  • Turn off heat and remove the tawa but not the bowl.
  • Allow to rest for an hour. After an hour remove the lid and foil and give a smooth mix.
  • Now your favourite and our favourite Hyderabadi Chicken Dum Biryani is ready to serve.
